Kid Friendly Turkey Meat Loaf ~ Onions optional

I was trying to decide what to cook for dinner tonight and my local grocery store had ground turkey on sale today. The special was buy one pound of ground turkey, get one pound free, a great deal and one I always take advantage of.
I decided to make turkey meatloaf for dinner. If you have anyone in your family or friends who prefer their meatloaf without diced onions here is an easy Turkey meatloaf recipe using onion and garlic powder in place of fresh. I have several recipes for Turkey meatloaf and I usually add sautéed sweet yellow onions and garlic to my meatloaf. Give this one a try.

Ingredients:
• 1 tbsp Worcestershire sauce
• 1 tbsp ketchup or BBQ Sauce
-1/4 cup of chicken stock, I have made this without and it is still moist
Optional ~ 2 tsp onion powder or if you want to use fresh Onion, 1/4 cup diced or omit the onion- Your choice no onion or more onion
• 1 tsp garlic powder or 1 garlic clove peeled and diced
• 1/4 tsp of sea salt
• ½ tsp ground pepper- you can always add a dash more
• 2 tsp Italian seasoning
• 1 large egg, beaten
• 2 lbs lean ground turkey (sometimes I use 1 lb or ground pork and lb ground Organic Turkey from Trader Joes)
• ½ cup regular bread crumbs or Panko bread crumbs
1/4 cup of Shredded Parmesan Cheese
• Pre-heat the oven to 325

How to Prepare:
• In a large bowl mix together the chicken stock, Worcestershire sauce, ketchup, onion powder, garlic powder, sea salt, pepper and Italian seasoning
• Add the beaten egg and mix by hand, make sure you wash your hands after mixing
• Add turkey and bread crumbs and mix together until just blended
• Do not over mix
• Place in a greased loaf pan, top with grated cheese and cook until the meat thermometer reads 160 degrees, about 40 to 50 minutes (make sure you place the thermometer in the center of the meatloaf to insure that it is cooked)

• Cooking time varies depending on the oven so I suggest using a meat thermometer

Suggested sides:
Children of all ages: Serve with greens beans, sweet potatoes or a small dish of wheat pasta with red sauce!
One of my favorites: A handful of fresh spinach, one tablespoon of sun dried tomatoes, and one teaspoon of walnuts all tossed together with a dash (about a tsp) of balsamic vinaigrette. If you like, add a sprinkle of feta or Gorgonzola cheese, very tasty!

If you have any leftovers they make a great meatloaf sandwich.  Please let me know if you try this and your comments are appreciated Enjoy!

Just cook Something! Cheers~ Kary

    1. 1/4 cup of chicken stock, however sometimes I make it without the chicken stock and it turns out just as good. Thanks so much for your question, just noticed the measurement is missing!
