Mango Salsa


Fresh Mango Salsa with Grilled Chicken
Last Sunday I was talking with my sissy Deb and she informed me that another snow storm had hit Spokane, WA. As a result of a long cold winter Deb and my niece Molly were experiencing major cabin fever, so I suggested an in door beach party. Debbie had already prepared my Shrimp and pasta dish so all they needed to do was crank up the beach music, fire up the wii surf game and they were good to go.

It may be snowing in other parts of the world but spring is starting to peek out in the Carolina’s, the cherry trees have blossomed and the Bradford Pears are in full bloom. After the long cold winter in the Carolina’s and indulging in my share of comfort food, I was feeling like consuming something a little lighter that would transport me to the tropics or at least somewhere warm. After all there is still a chill in the air, but spring is not far away.

I was at Trader Joe's the other day and picked up a fresh ripe mango. If you have a Trader Joe’s in your area check them out for fresh produce at a reasonable price.

Here is my recipe for fresh mango salsa, you can substitute cantaloupe for mango and still have a great fresh flavor. I served this with grilled chicken breasts and black beans. Also great with Grilled Pork, Slowed Cooked Pork, Turkey Burger, Slowed Cooked Turkey, Chicken Kabobs, Baked Chicken so many choices, use your imagination...A great link to learn more about the Mango.

Whether you live in a part of the world that is still experiencing winter or the warm sultry days of summer, delight your taste buds and visit the tropics with this flavorful salsa. Double or triple the recipe and season to please your taste buds! 

Ingredients:
• Fresh Mango Salsa:
– 1 Mango peeled and diced
– ¼ Red onion, diced
– 1 teaspoon lime juice
– 1 teaspoon garlic powder
– 1 medium tomato diced
– 1 teaspoon dried or 1 tablespoon fresh cilantro
• In large mixing bowl add the cantaloupe, red onion, lime juice, garlic, tomato and cilantro
• Gently mix the ingredients and it is ready to serve
Serve with tortilla chips and also delicious topping for fish, chicken or pork~
