Cobb Salad Kary's Way


There are many variations of the Cobb salad and numerous stories regarding the origination of the Cobb salad. Here is my recipe for a delicious salad served any time of the year.
 
Cobb Salad Kary’s Way

• Ingredients:

• ½ head of iceberg lettuce, rinse, pat dry with paper towel and chop

• 2 cups fresh spinach, rinse and pat dry, chopped, about two handfuls

• 1 large tomato diced or 1 cup of cherry tomatoes cut in half

• 1 ½ cups of diced cooked turkey or cooked chicken breast

• 1 Ripe Avocado, cut in half and scoop out the avocado then slice

• 2 Hardboiled eggs, peeled and chopped

• Kary’s homemade dressing:
• ¼ cup olive oil
• 1 teaspoon Balsamic vinegar
• 1 teaspoon powdered garlic
• 1 teaspoon dried basil or 1 tablespoon fresh basil
• Dash of sweetness: sugar, honey or agave, less than ¼ teaspoon, to add just a hint of sweetness

• ¼ cup fresh crumbled Blue Cheese or Gorgonzola

A good quality cheese costs more but the flavor is better so you need to use less

If I have celery, mushrooms or cooked bacon I toss in:
– 2 celery stalks chopped into bite size pieces
– 4 slices of cooked bacon, crumbled
– 8 fresh mushrooms cleaned and sliced

• How to Prepare:

• Rinse, drain and pat dry the iceberg lettuce and fresh spinach with a paper towel

• Chop the lettuce and spinach, toss in a large salad or mixing bowl

• Rinse tomatoes and dry with a paper towel. Dice whole tomatoes or slice cherry tomatoes in half, add to lettuce and spinach

• In a small mixing bowl blend together the olive oil, balsamic vinegar, garlic, basil and sugar, mix in the Blue or Gorgonzola cheese

• Pour the dressing over the lettuce, spinach and tomatoes, toss

• Add the following:

• Cut cooked turkey or cooked chicken into bite size pieces

• Slice the avocado in half, remove the seed, scoop out the avocado and slice

• Peel and chop the hard boiled eggs

• Options: Add in the celery, bacon and/or mushrooms
