My hubby Doug loves pizza; as a result I have a number of pizza recipes to share with you. I was planning to make ground chicken burgers on the grill; however Doug was not of like mind so I suggested pizza, always a hit in my home.
Pizza with Ground Chicken, Mushrooms, Spinach and Tomatoes
• 1 12 inch whole wheat pizza crust (if you have noticed the
pre-made keep getting smaller)
• The following ingredients are for two pizzas:
• 1 to 1/2 lb ground chicken- I cook 1 lb and use have for the
pizza the other for sauce to use with pasta)
• 2 cloves fresh garlic, peeled and diced or 1 tablespoon garlic
powder
• 1 tablespoon Italian seasoning
• Salt and Pepper to taste
• 8 oz can tomato sauce
• 1 8 oz package of mushrooms, sliced
– You can use
pre-sliced mushrooms or slice yourself. Always clean the mushrooms first, rinse and dry with a paper
towel
Per pizza:
1 medium tomato chopped
– 8 oz (1 cup) shredded reduced fat mozzarella cheese or pre-shredded
Italian or mozzarella cheese, your choice
• Variation to add:
– Toss on any other fresh vegetable you have on hand: Peppers,
broccoli, squash. Use what you have on hand and your imagination!
• Pre-heat the oven to 350 degrees
• In a large skillet sauté the onion and garlic over medium heat
until the onion softens and the garlic begins to turn lightly brown
• Mix in the ground chicken, Italian seasoning, salt and pepper.
Continue to stir as you cook the chicken for approximately 3 to 4 minutes
• Stir in the mushrooms and tomato sauce and heat for 2 to 3
minutes
– I like to maintain the thickness of the mushroom and they will
continue to cook in the oven
• Place the pizza crust in a pizza pan or baking stone (or follow
the directions on the package of the pizza crust)
• Spread half the mixture on the pizza crust, sprinkle on the
cheese and top with the chopped tomatoes
– Add in additional ingredients
• Place the pizza in the oven and cook for 10 minutes
• Turn on the broiler and set the
timer to broil for 4 minutes. The cheese should turn lightly brown and bubble -
Watch closely and so as not to burn
Remove from oven and cool slightly. Just cook something! Cheers!
