Blue Potato Home Fries

Have you ever eaten Blue Potatoes? Last week I had dinner at the Poplar Ridge Farm-to-Table Dinner and was introduced to blue potatoes, which were boiled and served as part of a chilled salad, very delicious.

As part of the work share program at Poplar Ridge Farm I brought home a pound of blue potatoes and on Sunday I decided to use the potatoes to prepare home fries for brunch.

Directions:
Rinse off the the potatoes, peel and slice. Heat about a tbsp of canola oil in a cast iron or large skillet on medium heat.
Sprinkle a dash of salt and pepper then cook the potatoes over medium heat for about 5 to 6 minutes. Flip them over and cook for another 5 to 6 minutes; the potatoes were small in size and cooked quickly.

My hubby Doug said that he enjoyed the flavor once he got pass the blue color, which looks more like violet to me, a little different from home fries made with Yukon Gold or Russet Potatoes, but yummy!

This was my first experience cooking blue potatoes, it is always fun and interesting to try new foods.

If you come across blue potatoes in your local market don’t pass them by, give them a try, the wee ones love the blue color!
