for a new Chicken recipe, well you found one! Coconut infused Balsamic Vinegar
and Lime Olive Oil marinade, the flavors burst through!

Grilled Chicken with Coconut and Lime |
Simple,
quick and as flavorful as you make it, this recipe is as easy as one, two, and
three:
Two tablespoons of Coconut
Balsamic Vinegar Salad Dressing
¼ cup Lime Olive Oil
1 lb of chicken
You
can add more of each depending on what you like, go ahead and take a taste of
the marinade before you pour it over the chicken. It’s your meal so feel free
to add more of the Coconut Balsamic Vinegar and Lime Olive Oil.
Set
aside a dipping bowl for the cooked chicken, added flavor and so savory.
Place
the chicken in a large dish and pour the marinade over the chicken; we prepared
this while the grill was warming up. Place the chicken on the grill and cook over
medium heat for about 8 to 10 minutes per side, until the juices run clear.
A
couple of weeks ago Doug and I were in Atlanta visiting the gran babies, Avery
will be 4 in November and Beckett will be the big 1 this July. After a
morning at the local pool we had lunch then visited downtown Woodstock, GA,
lots of cool little shops and restaurants. Our destination was Foxtale book store
and then a visit to a new shop Leaning Ladder Premium Olive Oil and Vinegar.
Avery
loves Foxtales’s book store and she selected a book for her and one for her brother
Beckett, if you’re in Woodstock stop in or visit your local book seller.
Next
stop was the Leaning Ladder Premium Olive Oil and Vinegar shop. Brenda and I
talked about trying a new recipe on Saturday but we had yet to find something
that sparked our interest. As we stepped into the shop one the owners explained
how we could taste the oils and vinegar before we purchased. First up was lime
infused Olive Oil with Coconut Vinegar, ok we were sold! Brenda and I agreed
that we would make chicken with this. Next up Strawberry Vinegar with Basil
Olive Oil, ok this was amazing! Spinach salad, red onion with walnuts, yes it
was as yummy as it sounds. One more taste, something to go with steak, Chipotle Olive Oil and Honey Balsamic Vinegar, ok wait for it; lingering taste of
chipotle peppers, yep amazing marinade for filet minion shish kabobs.

I can't find Lime Olive Oil. can I change it with something else?
ReplyDeleteThank you for your response. If you have a fresh lime or lime juice you can add a squeeze or two. Start with a little and you can add more after they are cooked. Always better to start with less. Please let me know what you decide to do. Cheers!
