I made Minestrone Soup. I was inspired by the book “The Blue Zone Diet” by Dan
Buettner which is filled with all kinds of good for you recipes.</span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">I have
never made Minestrone Soup, which was one of my fathers-in-law favorite’ soups,
but I gave it a go and now it is one of our favorite soups! And on a cold
wintry day it will warm your tummy and your soul. </span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">Like
Gumbo you can add what you have left over from other meals or whatever
vegetables you have on hand that need to be used, green beans,
corn, any kind of canned beans, tomatoes and small sized pasta.</span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">As usual
I looked in my pantry and fridge to see what I already had on-hand, did a
little browsing around the web for a recipe and here is what I came up with:<o:p></o:p></span></p>

Minestrone Soup inspired by <a href="https://www.blogger.com/blog/post/edit/8216990147683803732/8386807969466100227"><span style="color: blue;">“The Blue Zone Diet”</span></a> and <a href="https://www.blogger.com/blog/post/edit/8216990147683803732/8386807969466100227"><span style="color: blue;">Meli’s Family Minestrone.</span></a> Traditional
Minestrone Soup has some type of small pasta added in. I didn’t have any small
pasta in my pantry, but in my fridge I did have one lone almost done baked potato and six meatballs left over from a meal we had recently so I decided
to toss those in once the soup was cooked. </span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>

working on the exact measurements but as always working with what I have. </span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;"><u>Ingredients</u><o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">Olive Oil<o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">1 Sweet
Yellow Onion diced<o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">2 Peeled
and diced Carrots<o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">2 Stalks
of Celery diced<o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">3 Cloves
of fresh garlic, diced<o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">1 can
each: black beans, pinto beans and kidney beans. <i>Traditionally
chickpeas, northern beans or any of this type are used however I used what
I had in my pantry</i><o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">1 28
ounce can of diced tomatoes<o:p></o:p></span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">1 14-to-15-ounce
crushed tomatoes</span></p><p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">6 cups of
vegetable broth or water. I like the vegi broth because it adds more flavor.</span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">Tiny
pasta</span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">In a
large pot over medium heat add a splash of Olive Oil and sauté the onion,
carrots & celery for a few minutes until soft. Add the diced garlic, mix
together than add the beans, tomatoes, broth, salt & pepper stir and bring
to a boil, turn down to a low simmer for 15 to 20 minutes, until the vegi’s are
soft. </span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>
<p class="MsoNormal" style="line-height: normal; margin-bottom: 0in;"><span style="font-family: "Comic Sans MS"; font-size: 12pt;">I also
added one not fully cooked baked potato, I had this left over from another
meal, so I chopped into bite size pieces and added it to the pot while the soup
was simmering. Once the vegetables were cooked, I also added the cooked
meatballs to the soup, simmered a little longer to warm them. </span><span style="font-family: "Comic Sans MS"; font-size: 12pt;"> </span></p>

pasta, because who doesn’t need comfort food, especially now. And pasta makes a
quick and easy meals. My parents always keep a stocked pantry, so that habit
was passed on to me. Also, I use to travel weekly for my job and when I arrived
home I just wanted a simple home cooked meal.</span></div>

on the package. While the pasta boils, I cook the ground sausage then add to the drained Rigatoni
(any pasta will do) next add a jar of sundried tomatoes along with the oil they
are packed in and I toss in uncooked spinach, this is a perfect pasta dish any
time of the year. Simple and yummy! You can make this with ground beef, turkey, sausage,
chicken or salmon. Or for a vegi version omit the protein. You can toss in broccoli,
mushrooms, asparagus or any vegi’ s you like. Use your imagination! <o:p></o:p></span></div>

As for me I feel a sense of belonging in most places. I grew up in Southern California and lived at the beach, spent time in the mountains and in the deserts of California and Baja. </span><br />

comfortable with yourself and where you choose to live are two different
things. You might be one of those people who just loves living at the beach, in the mountains or a busy city and you might not ever consider living anywhere else but the place you currently live. However, you might not have found a way to feel free with yourself...yet. </span><br />

choose to live in a warm climate because that is what works for you right now. </span><br />

post today because Doug and I recently purchased a Mountain home, a quaint cottage
style home in need of a little TLC.<span style="mso-spacerun: yes;">
</span>Finding this little jewel was a journey in itself and a story for another post. As I shared with Doug “the house found us, maybe the house
needed us or maybe we needed the house…hmmm maybe both. Stay tuned for that story. </span><br />

move from Charlotte to the North Carolina Mountains I got “Oh you’re a Mountain
Girl”, hmmm yes I love the lush green mountains, the scent of pine and fresh
air but I also love the smell of the ocean, the feel of the salty air on my
skin, also the quiet dry heat of the desert and the wonder, that many before me
braved the hot dry trek across the California deserts to reach the Pacific
Ocean.</span></div>

<span style="font-family: "comic sans ms";">I don't know about you, but something magical
happens to me whenever I get out of the city and close to nature. Whether I am
near the ocean, a lake, a river, the desert or the Mountains, I feel at home. <o:p></o:p></span><br />

<span style="font-family: "comic sans ms";">Growing up in Southern California I learned
how to scuba dive, surf sort of but mostly knee boarding and body surfing. Camping
trips and campfires, lazy days soaking up the sunshine, playing volleyball,
long walks and beautiful sunsets were a big part of my life. And of course, exploring the tide pools on
school field trips and on my own. I wanted to be Jacques Cousteau growing up, a
world travel and explorer! <o:p></o:p></span><br />
<span style="font-family: "comic sans ms";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">There were family
camping trips, loading up our family camper and traveling the length of California,
Oregon and Washington on “PCH” the Pacific Coast Highway and interstate 5.
Exploring the Redwoods, Big Sur, Yosemite National Park; which to me are some of the
most magical places that I have ever visited.<o:p></o:p></span><br />
<span style="font-family: "comic sans ms";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">Then there is the San
Diego desert; Ocotillo Wells and Borrego Springs in the Anza-Borrego State Park,
where we spent a lot of time on the dunes. Dune buggies, three-wheeler bikes.
Yep I am talking way back, before they started making four-wheel all-terrain motorbikes. I am proud to say that I never did roll in one of those three wheeled
motorbikes or in a dune buggy. Unfortunately, a lot of people I know did injured themselves; broken collar bones, legs, arms and assorted injuries. </span><br />
<span style="font-family: "comic sans ms";"><br /></span>
<span style="font-family: "comic sans ms";">We also spent holidays,
vacations and long weekends in Baja camping, also acting as pit crew for friends during the
Baja 500 and the Baja 1000; a off-road Motorsport. And then there is the
Mint 400 off-road race in Las Vegas, so many memories with my girlfriends and
family. Which is now called the BF Goodrich Tires Mint 400…I miss the days of
simple titles for sporting events.<o:p></o:p></span><br />
<span style="font-family: "comic sans ms";"><br /></span></div>

<span style="font-family: "comic sans ms";">I also spent
holidays and weekends when I was growing up in </span><span style="font-family: "comic sans ms";">Big Bear</span><span style="font-family: "comic sans ms";">, where </span><a href="https://en.wiktionary.org/wiki/toboggan"><span style="font-family: "comic sans ms";">tobogganing,</span></a><span style="font-family: "comic sans ms";"> sledding and snow fights were the main
event and always a <a href="https://cookingwithkary.blogspot.com/2014/11/whenthe-weather-begins-to-cool-there-is.html" target="_blank">cup of cocoa </a>on the stove at our cabin to warm us up. <o:p></o:p></span><br />
<span style="font-family: "comic sans ms";"><br /></span></div>

<span style="font-family: "comic sans ms";">School camps and
Young Life Camps in the San Bernardino Mountains and Mountain ranges near San
Diego, California. Also spending time in Mammoth Mountain learning how to snow
ski. Now that’s a story. My Sissy Deb moved up to Mammoth Mountain after High
School to learn how to snow ski and work. <o:p></o:p></span><br />
<span style="font-family: "comic sans ms";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">A lot of our
friends and those chasing the snow and the surf would head up the Mountain for
Ski season. The jobs didn’t pay much, the housing was really expensive but
living the dream was all they cared about. As for my Sissy, she never did really
learn how to Snow Ski, her and bestie/roomie Desiree had to work several jobs
just to pay the rent and feed themselves. They also lived in some very
interesting places; the apartment above the Disco where you could hear the bumping beat of music late into the wee hours of the morning. </span><span style="font-family: "comic sans ms";">Then there was the
apartment with a drape as the door for the bathroom... interesting, but for me and my besties Lu and Candy it was a free place to stay. Lu already knew how to Snow Ski but Candy
and I learned in Mammoth, which kind of spoiled us because it is one of the
most beautiful Ski resorts I have ever been to. Plenty of powder, wide open
Ski runs, which I love and Sunshine on many days, pure Snow Skiing Heaven!</span></div>

<span style="font-family: "comic sans ms";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">So here we are in the mountains. We are a family of
roads warriors, adventures and travelers. We are now about 5 hours from the
coast rather than 4, so not so bad of a drive and still within driving range of our family in Charlotte and Georgia. <o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">It already feels
like home! Hubby is still painting doors and touching up, it is a process but
all the walls have a fresh coat of paint. The house has beautiful Chinese elm
floors in the great room area, we did replace the carpet in the two bedrooms
and LV in the bathrooms. Next up; pressure wash the deck, replace siding and the roof. Remove the planters from the front of the house; yes we do love these but they gotta go. </span></div><div class="MsoNormal"><span style="font-family: "comic sans ms";">I LOVE it
here and of course home is where the heart is...<o:p></o:p></span></div>

large Dutch oven I heated olive oil then sautéed the onions</span><span style="font-family: "Comic Sans MS"; text-indent: -0.25in;"> </span><span style="font-family: "Comic Sans MS"; text-indent: -0.25in;">and green peppers until they began to soften,
added the ground turkey to the pot, chili powder, garlic powder, salt and
pepper. I cooked it about 15 minutes on medium heat until the turkey started to
brown. There was a little grease which I drained then added the black beans,
kidney beans and tomato puree. I will add more spices once the chili is cooked
if needed. After the chili boiled, I let it simmer for over an hour. The longer
you simmer the chili the better the flavor! On my, new to me, stove top the
simmer setting is a little high so I moved the pot to a smaller burner to keep
the chili from continuously boiling. It was a cold blustery day so the heat
from the burners was welcome!</span></div>

too soon at 53 years young. In 1973 we changed High Schools and he would tell
people that we were twins and I flunked a grade, for the record he was born February
14<sup>th</sup> and me in August, clearly not twins! Oh, how I miss his humor, but
he can still make me laugh or cry when I think of him or hear a song, watch a
movie, TV show or hang out at the beach listening to the surf roll in and out, we
do love the ocean! <o:p></o:p></span></div>

my soul and I feel him with me always, during moments of joy and despair.<o:p></o:p></span></div>

joyful person, also the cheerleader, the glass not just half full kind of girl,

have our challenges in this life and when I start to “go down the rabbit hole
in my mind” to places best not visited, Douglas is there with all my Guardian Angels
pulling me back towards the light. <o:p></o:p></span></div>

packed my bags and was on a flight the following Wednesday night from Charlotte
to Madrid, then on to </span><span style="font-family: "comic sans ms";">Casablanca, yes, THE Casablanca, “Play
it for me Sam” place in Northern Africa!</span></div>

in the southeast is over and one of my favorite tomato dishes is Caprese Salad. </span></div>

on the Saint Lawrence River in New York state. Doug’s brother and wife have a cottage up there on
a lake, which is amazing and a really beautiful part of our country.<o:p></o:p></span></div>

peaches with us and Cathy had a new recipe to try; peaches, mozzarella, pancetta,
basil, drizzled with balsamic syrup. Oh, wow they were yummy and that easy to
make.<o:p></o:p></span></div>

and mozzarella, then layer with the pancetta and drizzle the balsamic and top

this long life of mine, it is this: In love, we find out who we want to be; in war,
we find out who we are.” This got my attention, did this grab yours?</span></div>

mentioned in my last post about our book club we decided to try something
different this year and meet at some of our local restaurants rather than host
from one of our homes. We always love getting together and look forward to
catching up, sharing lots of laughs, great food and our thoughts about the
book.</span></div>

discussing the book at a restaurant has a completely different vibe than
meeting at one of our homes. Still enjoyable, but at one of our homes it’s just
plain comfy. Also, I love writing about what our host prepared for the evening.

book. <o:p></o:p></span></div>

<span style="font-family: "Comic Sans MS";">Kristin Hannah is
one of our groups favorite authors and again she does not disappoint us. The
Nightingale is set in France during World War II and although we have all read
many history books about war WW II, this book is focused on two sister’s perspectives,
experiences and about the struggles that the women and children face. Back then
women were usually not on the front lines shooting guns, but they were fighting
a different kind of battle in their homes and villages. And some women, like
Isabelle found a way to join the resistance, I won’t share the details and
spoil the story, you will just have to read The Nightingale. <o:p></o:p></span></div>

tugged at my heart strings, brought tears to my eyes, an ache to my belly and I
could almost feel the chill in my bones. The story is about Women in war
and it is set during World War II in worn torn France during the German
occupation. <o:p></o:p></span></div>

<div class="MsoNormal">
<span style="font-family: "Comic Sans MS";">Kristin’s writing
takes me to a place where I can only imagine what is was like to experience the
screeching of the air raid sirens, the cold harsh winters, the anger,
loneliness, hunger and despair that people felt during WWII and any war zone.<o:p></o:p></span></div><div class="MsoNormal"><span style="font-family: "Comic Sans MS";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "Comic Sans MS";">To me the story is
about the women’s hope for the war to end, for husbands to find their way home
and to get back the simple pleasures of life they experienced before the war.
Basic survival was the goal for the day. And in war everyone is damaged, some
are heroic and some not so much.<o:p></o:p></span></div>

<span style="font-family: "Comic Sans MS";">I found myself
shivering, trying to stay warm while reading about how Vienne tried to keep her
family from freezing and not starving. <o:p></o:p></span></div>

<span style="font-family: "Comic Sans MS";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "Comic Sans MS";">This was one of
those books that continues to haunt me. Kristin writes about the struggles the
women face; basically, just trying to survive, to feed their families and avoid
freezing during the winter while many of the German soldiers ate their food,
took over not only their town but homes and abused the women. <o:p></o:p></span></div>

<div class="MsoNormal">
<span style="font-family: "Comic Sans MS";">War is truly an
awful thing and as I read <a href="https://kristinhannah.com/books/the-nightingale/">The Nightingale</a> I was thinking about the horrors of
war, but my hope continues to be that someday all mankind will lay down their
guns and find peace throughout the world, war does not solve problems. </span></div>

holidays, celebrating with family and later taking our kids to the pool at
Raintree Country Club and other years spending the 4<sup>th</sup> of July
holiday in Myrtle Beach. And then there was the year Doug climbed Mount Rainer
while I watched and waited for him to safely make it down the mountain. 4<sup>th</sup>
of July spent in Seattle, Washington and this year just hanging close to home away
from the maddening crowds!<o:p></o:p></span></div>

scrub, peel then thinly slice the potato. Heat olive oil in a large cast iron skillet<o:p></o:p></span></div>

<span style="font-family: "Comic Sans MS";">Fry
the potatoes, then keep one layer of cooked potatoes in the skillet, top with spinach,
sundried tomatoes and goat cheese. Add another layer and repeat.<o:p></o:p></span></div>

<span style="font-family: "Comic Sans MS";">Turn
on the broiler, place the cast iron skillet in the oven and broil for 2 minutes
Watch closely so they don’t burn! Remove and I think they will be yummy. <o:p></o:p></span></div>

month I posted my take on a recipe for Kitchari Soup from” First for Women’s” magazine
January 23, 2017 edition, yep the actual magazine that I picked up at my local
grocery store. This edition also included some other recipes, and one page that
caught my eye was “FIRST’s top 10 slimming soups”. The “BLOAT BUSTER” Asparagus
Dream soup was the first one that I wanted to try. </span></div>

the magazine <i>“Enjoying Asparagus soup can
shrink the belly fast. Credit goes to a compound <a href="http://www.health.com/nutrition/asparagus-health-benefits">(asparagine)</a> in the veggie,
which prods the kidneys to release trapped fluids from cells for an instant
slimming effect.” I did a little research on the web and asparagus acts as a directic which flushes fluids from your boday, here is a great <a href="http://link./">link.</a></i><o:p></o:p></span></div>

recipe called for 1 lb. each of green and white asparagus, I had what I thought
looked like about 2 lbs. of green asparagus so that’s what I used. When the
soup was done, we could really taste the coconut milk, so maybe I had about 1 ½
lbs. of asparagus, because I think if it was a full 2 lbs. the coconut milk
would not overwhelm the flavor of the soup. The soup was bland at first but grew
on us as we ate it. We shall see how it turns out next time…<o:p></o:p></span></div>

a large cooking pot sauté the diced onions about a Tbs. of olive oil until they
soften, add the chopped asparagus and veggie broth. Bring to a boil then simmer
for 5 to 10 minutes, until the asparagus is cooked. Remove about ¼ cup of the
cooked asparagus and set aside. Blend the soup, if you are using a regular
blender be sure to let the soup cool, hot soup expands and will blow the lid off
your blender. <o:p></o:p></span></div>

the lemon juice, coconut and cooked asparagus to the soup, heat and serve. <o:p></o:p></span></div>

you’re not familiar with shallots, they look like a small onion and have a slight
garlic flavor, if the green stems are attached they look a little like a green

can use sweet yellow onions if that is what you have in your pantry, a little
stronger than shallots so maybe use ½ of a yellow onion. <o:p></o:p></span></div>

article was about Detoxing the lymph system and losing 9 lbs in 4 days! You can find the complete article in the
January 23, 2017 magazine, they also have several great soup recipes. "</span><span style="font-family: "comic sans ms";">This
process is suppose to remove lymph-clogging wheat, processed fats and heal your gut."</span><br />

<span style="font-family: "comic sans ms";">The recipe uses mung beans…hmmm I wasn't sure what these were
so off I went to google <a href="https://www.blogger.com/"><span id="goog_275065953"></span>mung beans<span id="goog_275065954"></span></a> and Kitchari, and down the rabbit hole I
went…Kitchari is an Indian dish that and Kitchari means mixing, usually two grains. </span><br />

try, which cooked up like risotto not soup….and as I later realized I only used 4 cups of broth not the 8 that was recommended. I just grabbed a 32 ounce box of organic vegetable broth not thinking about the fact that this was 4 cups. I stumbled across this great link by author Katie Workman <a href="http://www.today.com/food/15-julia-child-quotes-inspire-wannabe-chef-all-us-t101848">Julie Childs Quotes </a> and as <a href="http://www.juliachildfoundation.org/timeline.html">Juila Childs </a>use to say </span><span style="color: #525252; font-family: "proxima_nova" , "helvetica" , "arial" , sans-serif; font-size: 15px; font-weight: 700;"><i>"The only real stumbling block is fear of failure. In cooking you've got to have a what-the-hell attitude."</i></span></div>

beans, found these at Earth Fare and really like the flavor <o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">2 tsp. ground turmeric<o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">2 tsp. ground
cumin<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">2 tsp. fennel
seeds, next time I will use ½ tsp. If you’re not familiar with fennel it has a
licorice taste next time I will use ½ to 1 tsp. <o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">1 tsp. smoked paprika,
this is a current personal favorite<o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">1 tbsp. Olive oil <o:p></o:p></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">Non-traditional your choice to add: ½ sweet yellow
onion and </span><span style="font-family: "comic sans ms";">2 fresh garlic
cloves, crushed, more if you like</span></div>

<span style="font-family: "comic sans ms";"><br /></span></div>
<div class="MsoNormal">
<span style="font-family: "comic sans ms";">In a large cooking
pot add olive oil and heat over medium heat, add onion and sauté until the
onion starts to become translucent, add crushed or chopped garlic and cook for
2 or 3 minutes, do not burn the garlic! <o:p></o:p></span><br />
<span style="font-family: "comic sans ms";"><br /></span></div>

<span style="font-family: "comic sans ms";">Add the vegetable
broth, beans, quinoa and stir in turmeric, cumin, fennel and paprika.<o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">Bring to a boil
and simmer, stirring occasionally for about 30 to 35 minutes. Using the
ingredients in my recipe this did not turn out as a soup, more like a risotto
and it was delicious, yep it was. </span><br />

air and as the leaves on the Sugar Maples start to turn a brilliant orange and
red, Ann said she was trying to think of comfort food for tonight and what she
came up with was a baked potato and a tossed salad bar, as Ann said, hey you
can use many of the same ingredients: diced tomatoes, avocado, shredded cheddar
cheese, scallions, home cooked bacon bites, red onion, sour cream, home-made
ranch dressing and balsamic dressing. <o:p></o:p></span></div>

doesn’t love a baked potato! I don’t think I have ever turned down a baked

dash of butter, salt and pepper oh so good. Tonight, however we all loaded up
our potatoes and tossed our salad while we chatted.<o:p></o:p></span></div>

was Jan’s selection and it truly is a joy to read. We all agreed that it was a
sweet, spiritual story, a bit fantastical with a touch of whimsy. The main character
loved Christmas, however in the story this year she was coping with a family
betrayal and trying to find her way back to herself and happiness. During the
Christmas holiday Joy makes a last-minute decision to board a plane, maybe an adventure
would help her change her life. <o:p></o:p></span></div>

that are tragic and magical lead Joy to a friendship with young Bobby and a not

are best for a potato bar. Ann had large potatoes so some of us split them. It
is always best to bake one per person, if you have left-over reheat the next
day, make home fries, potato soup or use as a thickener for mushroom soup. <o:p></o:p></span></div>

decrees~ Bake 60 minutes, I usually check on them after 30 minutes and flip ~
on the racks in the oven or on a foil covered baking sheet. Great information

dry the potatoes, I use a vegetable scrubber to clean the potatoes.<o:p></o:p></span></div>

with a fork, yes they can explode and what a mess that can be! I usually prick
each end of the potato and depending on the size of the potato if they are
really large maybe each side as well. <o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">Use a small amount
of olive oil to rub all over the potato, I have a baking dish I put them in or
you can lay them on the racks in your oven. <o:p></o:p></span></div>

<span style="font-family: "comic sans ms";">Bake for 30
minutes, turn over using tongs, be careful not to burn yourself! Bake another
30 minutes and then you have the perfect baked potato, of course depending on
the size they could cook faster, to be safe just check them as they bake. <o:p></o:p></span></div>
