Grilled Bratwurst, Bell Peppers, Sweet Yellow Onions and Tomatoes


Grilled Brat's, peppers, onions, tomatoes and Home Fries
What are you cooking this Fourth of July weekend?

How about; Grilled Bratwurst, bell peppers, tomatoes and onions with a side of roasted sweet potatoes. You can serve the Brat’s without a bun smothered with the grilled bell peppers, tomatoes and onions and a splash of spicy mustard, my hubby Doug prefers plain ordinary mustard. Your meal, your choice so jazz it up!

Ingredients 
• 1 package Bratwurst, usually five Brat’s
• One bottle of dark beer, any kind; Guinness is our favorite
• 1 Sweet yellow onion peeled and sliced
• 2 large Bell Peppers, slice open, remove seeds and cut into quarters
• 2 large tomatoes slice into 8 pieces, Slice the vegetables thinner if you are going to serve your Bratwurst in a bun and smother with the grilled vegetables
• 1 to 2 Tablespoons Olive Oil or non-stick cooking spray
• ¼ tsp salt
• ¼ tsp pepper
Directions
• Heat the grill to medium heat
• Place the Bratwurst in a large pot, pour in the beer, bring to a boil them simmer for 15 to 20 minutes
• Drain the Bratwurst and discard the beer
• In a grilling pan toss in the bell peppers and onions, drizzle with olive oil, salt and pepper. Tomatoes cook very quickly so I add them to the grilling pan when the peppers and onions are cooked
• Set the grilling pan and Bratwurst on the grill
• Over medium heat grill the bratwurst for about 4 or 5 or until brown and the vegetables until they are soft
• Remove the grilled vegetables and toss in the tomatoes
– Be Careful not to burn yourself when you remove the grilling pan!

 Serve with home oven roasted sweet potatoes, potato salad or baked beans
