For those of you who watched the Super Bowl and indulged in some of your favorite party foods, now is the time to get back on track! We made it through Monday and the food hang-over so prepare a meal that is light and healthy.
After a weekend of cooking and indulging I thought I would offer up a simple solution for a quick home cooked meal.
When I am traveling and my husband Doug is left home to fend for himself one of his favorite meals is roasted chicken, black beans and corn. Many markets offer a wide variety of roasted chicken which is delicious and ready to serve so why not pick up a can of black beans and a can of corn for some great chicken tacos.
I always keep on hand wheat tortillas, salsa and tomatoes so he can make his chicken tacos with black beans, corn, tomatoes and a dash of salsa.
Hey, green beans and a baked potato are great with the roasted chicken as well. Go easy on the toppings!
