Grilled Salmon Basil and Pasta


Fresh Basil


This year my basil plant is growing like crazy and there is nothing better than fresh basil tossed in with pasta.



Fresh salmon cooked on the grill is another favorite, add a side of pasta and you have the perfect meal. Here’s my basic salmon recipe and a quick tasty pasta recipe.

Grilled Salmon with a side of pasta

Ingredients:
• 1 lb Salmon filet with skin on
– Cut the Salmon into 4 four ounce steaks, rinse and dry salmon with a paper towel

• Marinade:
– 1 Tablespoon honey or agave
– 1 Teaspoon Old Bay Seasoning

Pasta
• 4 ounce package Angle hair wheat pasta
– Favorite pasta Barilla Plus, great taste
• 2 cups fresh spinach, clean and chopped
• 1 cup fresh sliced mushrooms
– Or marinated mushrooms, drained
• 1 large tomato chopped
• 2 Tablespoons olive oil
• 2 Tablespoons of fresh basil or 2 teaspoons dried basil
• 1 Teaspoon powdered garlic
• ¼ cup fresh parmesan cheese

Cooking Instructions:
• Pre-heat the grill
• In a small mixing bowl blend the honey or agave and Old Bay Seasoning
• Spray the skin side of the salmon with cooking spray
• Lay salmon skin side down in a dish
• Coat with the honey or agave and seasoning mixture
• Place in the fridge
• Clean and chop the spinach, mushrooms and tomato, set aside
In a large pot cook the pasta per the instructions on the box
• While the pasta is cooking place the salmon skin side down on the grill over medium heat and cook for 8 to 10 minutes
• When the pasta is done drain the pasta, I usually reserve a ½ cup of the water and add to pasta after it is cooked if needed
• In a large dish toss the pasta, olive oil, basil and garlic. Add the spinach, mushrooms and tomato
• Plate the salmon and pasta
• Sprinkle the pasta with grated Parmesan cheese and serve

Some times I cut the salmon into bite size pieces and toss in with the pasta and a tablespoon of capers, also really tasty!
