I have never been a really big fan of sweet potatoes, mostly because well they are so sweet.
However this is a really great recipe for oven roasted sweet potatoes.
All you need are a couple of sweet potatoes, garlic and onion.
This dish is so delicious and easy to make you will wonder why you haven’t made this before. Last night I served this dish with salmon, glazed with homemade salsa Verde sweetened with Agave. Separately they would have been great, but the sweet potatoes of did not compliment the salmon with the sweet glaze.
Oh lessons learned. I also severed steamed asparagus so it wasn’t a total waste, and I will use the left over salmon for a pasta dish latter this week and the sweet potatoes for homemade soup.
Ingredients:
4 sweet potatoes, peeled and chopped into bite size pieces, you could also cut as fries
6 garlic cloves, peeled and chopped
1 small red onion peeled and diced, sweet yellow onion would probably work as well
Salt and Pepper to taste
Non-stick cooking oil spray – My new favorite kitchen item is the “Misto” Gourmet Olive Oil Sprayer, absolutely awesome, you can fill with your favorite oil
Option: In a large bowl toss the sweet potatoes, garlic, onion, salt, pepper and lightly coat with olive oil
Heat the oven to 350 decrees
Spray a baking dish with non-stick cooking spray
Toss in the sweet potatoes, add the chopped garlic and onions
Toss in the sweet potatoes, add the chopped garlic and onions
Salt and Pepper
Spray with non-stick cooking oil
Bake for 25 to 30 minutes, when fork tender serve
The garlic and onion add such a wonderful flavor to the sweet potatoes and great side for Thanksgiving.
